Homemade Authentic Salsa Verde Recipe (2024)

Learn how to make an authentic Mexican homemade salsa verde in minutes. You just need 5 fresh ingredients! Step by step recipe and video.

A few things are always in my kitchen, like limes, avocados, tomatoes, onions, and salsa!

Salsa in Mexico usually refers to a delicious mixture of vegetables, herbs, spices and chiles liquified in a blender. Salsas are truly versatile, we pour them on meat, eggs, quesadillas, tacos, shrimp, tostadas, you name it.

By the way, that yummy mix of chunky tomatoes, onions, cilantro and pepper some folks in the US call salsa, we call pico de gallo in Mexico. You can also find my avocado salsa recipe here for a nice variation.

What is Salsa Verde?

Salsa verde is a very popular Mexican salsa. Its name comes from its color. The color is given by the tomatillos, the fresh cilantro and the green peppers.

This salsa is very versatile. I learned the recipe from my mother who learned it from my grandmother. We usually boil the tomatillos and peppers before blending them, but there are other ways to make it as well.

Salsa Verde Variations

Raw green salsa is very easy to make. The ingredients are obviously not boiled or cooked in any way. For this version, you must use very fresh and clean ingredients. This salsa usually has a touch of lemon.

Roasted green salsa. For this salsa most of the ingredients are roasted on a comal or skillet. This process gives them a different, smoky flavor. Look at this recipe for shrimp in roasted tomatillo salsa.

Another easy way to create a variation is using different peppers. You can use serrano peppers (the traditional pepper used in salsa verde), jalapeño peppers for a less spicy salsa, or another type such as Anaheim, poblano, or a combination of several of them.

Process

Peel and clean the tomatillos. Wash the chiles and cut the stems off.

Place the tomatillos and chiles in a pot and cover with water. Bring to a boil and then cook for about 10 minutes. You will know when they are done when they change from a bright green to olive green. Let them rest to cool down.

Strain them but keep the liquid and set them aside.

In a blender combine tomatillos, chiles, onion, a large handful of cilantro and salt to taste.

Mix, taste for salt and consistency, if it is too thick, add a little bit of the liquid you set apart.

That's it!

FAQs

What is salsa verde sauce made of? ›

Salsa verde is really easy to make from scratch, all you need are tomatillos, onion, jalapeño, lime, and cilantro. To make the salsa verde, you will need to cook the tomatillos, which you can do by either boiling them, broiling them in the oven, or pan roasting them.

How do you thicken homemade salsa verde? ›

Simply heat up a pot or pan (make sure it's large enough for all the salsa), add a couple tablespoons of oil, and then add salsa. Stir for 3-5 minutes until salsa has reduced to a desired thickness and consistency.

How to make salsa verde not sour? ›

Try adding more salt, a ¼ teaspoon at a time. Adding salt also helps to mellow out acidity and sometimes even take the edge off heat, so try adding a bit more, along with the sugar, if your tomatillos are sour or if the salsa is a bit too spicy.

How long does homemade salsa verde keep? ›

An open jar of store-bought salsa lasts about 2–4 weeks in the fridge, but you should always check for signs of mold, fuzz, funky smells, and any other signs that something is awry before diving in. If you make your own salsa, it'll stay good for just five to seven days in the fridge.

Which of the following items is the main ingredient in salsa verde? ›

The main ingredient in salsa verde is tomatillo. Also known as a “Mexican husk tomato”, the tomatillo is related to the traditional red tomato, but—as you may have guessed—it's green.

What are the ingredients in specially selected verde salsa? ›

INGREDIENTS: tomatillos, roasted jalapeno peppers, roasted tomato puree, water, contains less than 2% of onion, salt, lime juice, distilled vinegar, cilantro, garlic, spice, natural flavor.

Why is my salsa verde watery? ›

After the salsa sits—more on that in a moment—the tomatoes will break down. If you didn't remove the seeds, they will make the salsa extra watery, with a pool of vaguely tomato-flavored liquid at the bottom of your bowl. Nobody wants to scoop vaguely tomato-flavored liquid onto a chip.

How do you keep salsa verde from gelling? ›

Once it's refrigerated, it will gel a bit because of the pectin in the tomatillos. to break it up, give it a stir and let it sit at room temperature. As it sits at room temperature, it will start to relax. There's really not an easier recipe out there with as much return on flavor.

Why is my salsa verde bubbling? ›

Salsa can sometimes get fizzy because of the natural process of fermentation, which occurs when the sugars in the vegetables or fruits are metabolized by bacteria and yeast. During this process, carbon dioxide (CO2) is released as a byproduct, which can create bubbles or a fizzy texture in the salsa.

Why does my homemade salsa taste bitter? ›

Onions and garlic are essential aromatics in salsa, adding depth and flavor. However, if not properly cooked, they can introduce bitterness. Sautéing onions and garlic until they are soft and translucent helps to mellow their flavors. Overcooking them can lead to a burnt flavor, which can be bitter.

What is the difference between salsa Mexican and salsa verde? ›

Cilantro often makes an appearance in both, but more so in green salsas, which feature an overall herbal flavor. Typically red salsas are served slightly chilled, while green salsas can be served chilled or as a warm sauce. Another general rule? Red salsa is hotter than green.

Can you freeze homemade salsa verde? ›

I like to freeze this salsa in pretty small portions, roughly 1/2 cup at a time, because I find that you don't need much more than that for lots of uses, and it's easy to grab a few portions if I need to.

What to eat salsa verde with? ›

Salsa verde, or green salsa, is growing in popularity as more people are willing to try different salsa beyond the common salsa roja. Instead of red tomatoes, salsa verde uses tomatillos.
