Step 2: Add the remaining filling ingredients to the same bowl as the apples: lemon juice, sugar, cinnamon, salt, and corn starch. Give it a good stir and let it sit while you work on the crisp topping.

Step 3: While the apple filling marinates, prepare the crisp topping. Melt the butter and coconut oil in a microwave safe bowl.

Stir together the melted butter and coconut oil with the remaining crisp topping ingredients: brown sugar, whole wheat flour, rolled oats, and salt. The mixture should resemble wet sand.

FAQs

How do you keep apples from getting mushy in apple crisp? ›

How do you keep Apple crisp from getting soggy? You need enough butter in your topping, try both melted or cold cut into the dry ingredients. Also, there needs to be enough texture to keep it from just flattening into the fruit below.

How do you thicken apple crisp? ›

Your topping is crumbly—you don't want your filling to be crumbly, too. Adding cornstarch and flour to the apple mixture will help bring your crisp's filling together. You want to make sure you have a nice balance of the sweet and tart in your dessert.

What are the best apples for making apple crisp? ›

What Makes A Good Apple For Apple Crisp? The best apples for baking keep their structure under heat, which prevents the chunks of fruit from turning into mush after baking. The firm and crisp Granny Smith and Honeycrisp varieties are popular apples to use in apple pies and apple crisps.

What's the difference between apple crumble and apple crisp? ›

Like an apple crisp, an apple crumble is a baked fruit dessert with a layer of topping. But unlike the crisp, the crumble topping rarely includes oats or nuts. Instead, a crumble's topping is more like streusel, made with flour, sugar and butter.

Should I cover my apple crisp while baking? ›

Baking: Start baking the apple crisp covered with foil. This allows the apples to soften without any risk of the topping over-browning. After about 20 minutes, remove the foil and let the crisp finish cooking uncovered. Once the juices are bubbling, the topping is golden brown, and the apples are tender, it is done!

What makes apples so crispy? ›

Bursting with crunch

Each of the small juice-packed cells is stuck to each other. When you bite into a crunchy apple the individual cell walls rupture and the juice is released from the sack, so you get an instant sweet juicy hit. The amount of crunch is controlled by the cell walls that glue the cells together.

Why add flour to apple crisp? ›

Flour- Flour helps to create the perfect topping and bind it all together. I used all-purpose. You can definitely substitute with gluten-free flour but I'm not sure how oat flour, coconut flour or almond flour would work. Butter- The butter gives the best flavor and texture and holds together the dry ingredients.

What can I use instead of cornstarch in apple crisp? ›

“I have used tapioca flour in place of cornstarch for crisps, pie fillings, and cobblers,” Guas says. “The rough substitution is 2 tablespoons of tapioca flour for 1 tablespoon cornstarch.” Another significant benefit of tapioca is that it freezes well, keeping your baked goods the perfect consistency.

Is apple brown betty the same as apple crisp? ›

Both are very similar apple desserts, but the difference mainly comes down to the crumble topping: Instead of the flour and oat mixture used in an apple crisp, an apple brown betty uses breadcrumbs for its crumbly, delicious topping.

Should I refrigerate apple crisp? ›

Apple Crisp is very much like apple pie in that it doesn't NEED to be refrigerated, but the shelf life will be extended if you do store it in the refrigerator. I recommend storing it on the countertop for up to two days, or up to four days in the refrigerator.

How to keep apples firm in apple pie? ›

Simple. Gently precook the apples, which drains them of liquid and shrinks their bulk. They'll shrink no more once they're added to the pie, which means there'll be no gap between the filling and the top crust. But don't toss out that liquid!

Can I cut apples the night before for apple crisp? ›

We prefer to prep the apples when we make the crisp, but you can prep them ahead of time. Peel and slice the apples and toss them with lemon juice, then pack tightly in freezer bags and refrigerate for up to one day.

Why did my apples turn to mush in my pie? ›

Use Overripe Fruit

Even if you choose the perfect apple variety, if the fruit is overripe, your apple pie filling will turn to mush. The perfect apple pie filling is not too sweet. It has just the right amount of tartness to offset the added richness of brown sugar and cinnamon.

How do you keep apples moist? ›

I used 1 tablespoon of freshly squeezed lemon juice per cup of water. I soaked the apple slices in the water for five minutes, then rinsed in a colander under running tap water. The lemon water-dipped slices stayed fresher in the zip-top bag than they did on a plate.
