I admit, I had my first pumpkin beer last night. I know. I didn't want to, but we were eating dinner outside and it was cool and fall-like and it just sounded so good. And it was September 1, after all. But we're still in that weird in-between seasons time, with a few more days until Labor Day and a few more weeks before summer is officially over. So, here's one more glorious summery drink that will be the perfect way to kiss summer goodbye.

Growing up, I absolutely loved Lime Rickeys. So when I saw Martha Stewart's more adult-version in her magazine, I immediately knew it would be my end of summer co*cktail Friday drink. It's simple, but unique with the addition of cilantro and lots and lots of limes. Perfect for sipping outside with a light sweater, as you kiss the summer goodbye. Wahhhh.

GIN LIME RICKEYS WITH CILANTRO RECIPE

I changed the original recipe's ratios up a bit (more gin!), but the instructions for this co*cktail recipe are super easy, even though you're essentially making your own limeade (of course you could buy limeade, too, but if you have an extra 3 minutes, I suggest making it!). Which is perfect for a Friday evening when all you want to do is wind down from a long work week with a co*cktail. You'll simply pour the water in a pitcher, along with the juice of three limes, gin, and sugar. Then you'll add the other two limes sliced into rounds and pop the whole thing in the fridge for about an hour to chill.

Pour over ice and you're ready to serve these gin lime rickeys and celebrate the end of summer.

Because even though I'm going to miss the sun and heat immensely, we do have a lot of look forward to. Like more pumpkin beer and Halloween candy. Plus, you never know; the weather could remain perfectly pleasant for the next month or so. Fingers crossed. In the meantime, gin with lime will keep the summer spirit alive for me.

I used to not like cilantro. But then something changed and now I like it alright. It seems that people generally LOVE it or HATE cilantro, but I guess I'd place myself right in between. If you really, really can't stand it, you can certainly use parsley here or just leave the greens out altogether.

I mean, do you really need to pair anything with gin and lime?

This gin lime rickey was nice and tart from the lime, but also sweet from the added sugar. The gin wasn't overpowering at all and this could be the perfect way to introduce gin into your repertoire if you're not totally crazy about it already.

We enjoyed these co*cktails on what could be one of the last warm summer evenings here in Boston, on the deck with a delicious dinner. I'll miss you, summer. But now, I'm going to start scouting around for some fall drink ideas. Pumpkin pie martini, anyone?

GIn Lime Rickeys with Cilantro

Ingredients

  • 1 cup water
  • 5 limes
  • 1 cup gin
  • 3 Tbsp superfine or granulated sugar
  • 3 cups club soda
  • 1 small bunch cilantro

Instructions

  • Pour water into a pitcher and juice 3 of the limes into it.

  • Add gin and sugar. Cut the other 2 limes into rounds and add them in the pitcher, too.

  • Refrigerate pitcher until chilled. Remove from fridge and add in the club soda.

  • Pour co*cktail into glasses over ice, add a bit of cilantro to each, and serve.

I really like that they sell the "tall" sizes in the stores rather than having to special order them, since I am tall and have a hard time finding pants that fit properly around the waist but aren't high-waters!     The moment I first slid into a pair of Gap's 1969 collection Straight jeans, I was in love! Gap's 1969 collection is THE only line of jeans that will properly fit me and my short stature with their petite sizes. I never have had to alter them and my boyfriend loves how I look in them (he always comments on how nicely they show off my curves) and perfers me in a pair of these over any sexy outfit I've ever come up with.     I am fairly new to the wonderful world of 'We are not Martha' and I fall in love more with every new entry. How excited I am that you are as crazy for Gap jeans as I am. My interest in Gap started at the beginning of last year when I discovered the Gap Outlet ten minutes from my campus. My girlfriends and I would scrape our money together and go on mini shopping sprees. I gathered everything
    from charcoal corduroys to black Premium Super Skinny jeans that fit like jeggings. This was when I scooped up my favorite pair of Gap 1969 Always Skinny dark wash jeans. I fell for the low rise, skinny fit in the hip and thigh areas, and the slim leg opening. They sure do know how to make jeans.

    I had them hemmed so they fell right under my ankle. I am a mere 5'2" which causes all sorts of issues when shopping for the perfect pair of jeans. Since they have been hemmed, they have become my go-to pair of pants. The dark wash is perfect for flirty tops to go out at night and works well with button up oxfords for work. I pair them with my camel colored Steve Madden Heaven flats for a quick put-together look when running errands.

    Since I have discovered the power of Gap jeans I have devoted myself to purchasing all kinds of pants from them. My latest purchase was the Perfect Khaki Trouser pant in charcoal. My mom mentioned needing new fall work wear and I'm thinking about bringing her to Gap this Labor Day to show her how awesome their selection is.

    gasp! I don't know what kind of jeans I'd like...It's been a really long time since I've had new jeans. I usually just schlop around in sweat pants.     AWESOME, I have never heard of or seen those Ponte Legging Jeans or the brand around town. The closes Gap is 4 hours one way away,so I drove one way 4 hours to the gap to buy my items & just fell in love with them.I stayed with my friends & drove back. I just love them!! My friend bought a pair too.I just might have to sleep in them. I like the real straight dark wash! I love 1969′s fit! I am the only one in my town that has a pair. I liked you on facebook.
