This vegan Eggplant Bacon recipe takes all the flavor and crispiness of bacon and packs it into thinly sliced eggplant! Perfect in your vegetarian breakfast spread, on BLTs, and just generally anytime you’re craving bacon.

When I went vegetarian, there was one craving that would pop up out of the blue, coming at me with full vengeance. I’m talking the bacon cravings.

But in this day and age anything is possible, including the meatless bacon! Which is, of course, what we’re whipping up today.

This vegan bacon uses eggplant as the base. Eggplant is super absorbent and great with smoky flavors, so it’s an obvious pick. Then just brush it with a flavorful spice combo and pop it in either the air fryer (for maximum crispiness) or oven! Boom, bacon.

Ingredients for Eggplant Bacon

Unlike many of the vegan bacon recipes out there, we’re making this Eggplant Bacon without liquid smoke. Instead, we rely on the combined flavors of Worcestershire sauce and smoked paprika!

  • Eggplant: The base of our vegan bacon! It’s cut into thin into strips and then loaded with flavor. Most types of eggplant work well here, but we’re going with the classic Italian eggplant.
  • Soy sauce: This adds the salty component (sub tamari for a gluten-free option).
  • Oil: Olive oil helps to promote that crispy, crunchy texture to simulate bacon.
  • Maple syrup: Just a drizzle of sweetness transforms the flavor depth of this eggplant bacon!
  • Worcestershire sauce: This brings major umami into the mix. Be sure to use a plant-based Worcestershire, as the traditional sauce has anchovies (I love this one)
  • Spices: Finally, a blend of spices like smoked paprika, salt, pepper, garlic powder, and cumin!

How to vegan-ize your bacon

Step 1: Slice Bacon
Slice your eggplant pretty thin (about 1/8 of an inch). I use a mandolin slicer to make this easier!

MANDOLINE SLICER

This tool makes quick and even slicing a breeze!

Step 2: Flavor It Up
Stir together your favor makers and brush them onto the eggplant slices.

Step 3: Cook
You’ve got two options here. You can airfry (my preferred method because it makes them extra crisp) or oven bake.

I think you’re going to love this plant-based bacon! Serve it with these Vegan Breakfast Tacos, or with a big stack of Paleo Banana Pancakes, or even on a Vegetarian Wedge Salad!

If cut thin enough it will have the texture and crispiness of bacon. But in my opinion it takes a very strong imagination to think it tastes anything like bacon. I would eliminate some if not all of the salt as the soy sauce contains alot of sodium.Crispy Eggplant Bacon Recipe (Air Fry or Oven) (22)

The flavor was tasty, although, to me, the flavor was not like bacon. I cooked it an hour because it did not crisp up, even then. Why do you think that this happened? I used all the sauce. Was that too much?

Just seen this although I haven’t tried it. if you use Worcestershire sauce it isn’t vegan as there’s anchovies in the sauce. If you use Henderson’s relish instead it will be vegan. Henderson’s relish has a similar flavour to Worcestershire sauce but is vegan approved

FAQs

What is the secret to cooking eggplant? ›

Eggplants are known to absorb a lot of fat while cooking. A useful tip to prevent sogginess and greasiness is to salt sliced or diced eggplant and let it sit for an hour. This helps to draw out moisture. Next, rinse and drain any liquid from the sliced eggplant, then pat dry before cooking.

Can you air fry this isn't bacon? ›

It's fantastic cooked in an air fryer , and a very pleasant addition on pizza, or in a risotto. I would definitely recommend it. As a new vegan I can say this is the best facon (fake+bacon) I've ever tried. If you fry it long enough in some olive oil (or any oil of your choice) it comes out crispy and delicious.

Is it better to peel eggplant before frying? ›

Eggplant can be cooked either way: skin-on or peeled. This is entirely based on personal preference. Some love the extra bite and purple hue that peaks through the breading of a slice of fried eggplant, while others find the texture of the skin a little crunchy and unappealing once fried.

Why do you need to soak eggplant before frying? ›

I tend to soak the slices in a bowl of water with a couple of tablespoon of salt for about 30-45 minutes. It doesn't have to do with bitterness, but I find that in doing this, the fried eggplant turns out less greasy," Jenkins says.

Should you salt eggplant before frying? ›

This article has been viewed 83,844 times. Salting an eggplant can make it less bitter, which is especially important for older eggplants. Salting can also help the eggplant absorb less oil, particularly when you're frying it, and it helps flavor the eggplant by allowing it to pull salt into the vegetable.

What happens if you don't salt eggplant before cooking? ›

Older recipes call for salting eggplant to draw out the bitter juices, but today's eggplants are less bitter (unless very large), so salting is largely unnecessary. It will, however, help the spongy flesh absorb less oil and crisp up like a dream.

Why soak eggplant in milk? ›

Soak eggplant slices or cubes in milk for about 30 minutes before cooking. The milk not only tempers the bitterness, but it actually makes for eggplant that is extra creamy, since the vegetable acts like a sponge and soaks up a good amount of milk in its flesh.

Why soak eggplant slices in salt water? ›

Salting the eggplant before cooking draws out excess moisture so the eggplant has a stronger flavor and a softer, more tender texture. Less water = more flavor. Does eggplant need to be salted? Eggplant does not necessarily need to be salted, but some recipes benefit from the process.

Where does the grease go when you air-fry bacon? ›

It doesn't sit in grease.

Unlike bacon that is cooked on a sheet pan in the oven, or in a skillet on the stovetop, the air fryer allows the bacon grease to drip into the pan below as it cooks, so the bacon strips will be less greasy when they are done.

Should I use foil in air fryer for bacon? ›

If you're using an oven-style air fryer, you'll want to put the bacon on an air-fry basket (basically a mesh rack) with either a solid pan or a piece of aluminum foil folded up on the edges underneath to catch any bacon grease drippings.

Why is my fried eggplant mushy? ›

Overcrowding the pan.

The best eggplant is caramelized and crispy on the outside and melt-in-your-mouth tender on the inside. This is achieved by giving the cubes or slices enough room to brown while they cook.

How do you keep eggplant from absorbing oil when frying? ›

Before you cook

Before you start cooking an eggplant, you should get rid of any liquid residues and coat it well so it won't absorb oil. For this reason, slice your fruit (yes it's a fruit) and place it in a colander. Add a generous amount of salt and let it sit over the sink until all the liquids are eliminated.

Why is my fried eggplant so greasy? ›

Typically eggplant behaves like a sponge, soaking up heroic amounts of oil when fried. The Terzo Piano chefs use this trick to prevent heavy aubergines: Before frying, soak the strips of eggplant in an ice water bath. They will absorb water and drop in temperature.

Why do you soak eggplant in milk? ›
